Greek Style Peas with Extra Veggies

This dish is loaded with veggies, and only takes 10 min to prepare! Consider making ahead of time and just asking your sitter or nanny to heat up while you are out.

- 1 lb. Peas fresh or frozen
- 1 Onion diced
- 2 Carrots sliced
- 1 Potato cut into bit size pieces
- 2 Tomatoes medium sized & grated / or 10-12 oz. can of chopped tomatoes
- 1/2 cup Extra Virgin Olive Oil
- 2-3 tbsp Dill chopped, (optional)
- Salt & Pepper to taste
Heat olive oil in medium sized pot
Sauté onions until soft. Add carrots and potatoes and sauté 3-4 minutes longer
Add peas and mix until all peas are covered in the olive oil
Add tomato, dill (optional), pepper and a half a teaspoon of salt. Add enough hot water so that the peas are barely covered (about ¼ cup)
Mix well and bring to a boil. Then lower heat and simmer for 30 minutes until peas are soft, the water is gone – and the olive oil remains
Serve at room temperature with feta and bread. Add salt as needed. (Feta is the classic cheese that we eat with this very traditional Greek dish, but feel free to use any other kind of cheese your family likes) Enjoy!
