Peanut Butter Cups
Enjoy this delicious, healthier version that can be made in a matter of minutes!
- 1/2 cup coconut oil slightly melted
- 1/2 cup cocoa powder
- 1/2 cup honey
- 1/2 cup peanut butter
- 1/2 tsp pure vanilla extract
- unsweetened shredded coconut or chopped nuts optional, for garnish
Prepare a muffin pan with 12 muffin liners.
Combine all ingredients in a medium bowl and whisk until smooth. Pour the mixture into the prepared muffin liners (each liner will be approximately half full). If desired, top cups with unsweetened shredded coconut or chopped nuts.
Refrigerate the peanut butter cups until hard, at least 30 minutes. Store cups in the refrigerator.
