Triple Chocolate Cupcakes

Ingredients
  

  • 185 g caster sugar
  • 120 g self raising flour
  • 65 g cocoa powder
  • 285 g butter
  • 3 large eggs
  • 100 g white chocolate chips
  • 100 g dark chocolate chips
  • 50 g milk chocolate, melted
  • 200 g icing sugar

Method
 

  1. In a bowl, cream together 185g butter, sugar and egg until light and fluffy. Fold in the flour and cocoa powder.
  2. Add chocolate chips and mix well.
  3. Cook in the oven at 190C for 15-18 minutes. After 15 minutes check with a skewer and if clean, they are ready.
  4. Make buttercream with icing sugar, 100g butter, and melted chocolate. Spread or pipe onto cooled cakes.
