Baked White Fish with Pesto

Four ingredients and fifteen minutes is all you need to make this simple, yet delicious, dinner for two. Consider making for Valentine’s Day, or for that special occasion! Serve with a side of rice or roasted vegetables, Enjoy 🙂

Ingredients
  

  • 1 tbsp Coconut Oil melted
  • 6 tbsp Pesto
  • 4 tbsp Whole Wheat Breadcrumbs
  • 4 White Fish Fillets such as cod or haddock

Instructions
 

  • Preheat oven to 375. Spread the coconut oil on a large rimmed baking sheet and set aside.
  • Combine pesto and breadcrumbs in a small bowl. Mix with a spoon or your fingers.
  • Place the fish fillets on the baking sheet. Spread a heaping spoonful of the pesto mixture onto each piece of fish, gently pressing down.
  • Bake 8-10 minutes, until fish flakes easily with a fork.
